I am in a living situation right now where I am in a room with my cat, there is nowhere else to do rituals or to put the cat while I do them. I have read of evoking demons and feeling weird etc, so if something showed up in some way, would it scare my cat or otherwise bother him?

Sometimes yes and sometimes no.
I’ve had demonic interactions where a pet was somewhere in the house and they were barking at seemingly nothing, but I’ve also had demonic interactions where the pet kinda lounges about as if nothing was happening.

It seems to me that just about a every witch/ warlock has a cat or cats .Even E.A. 
& Lord only knows what that cat has seen. Pay attention to how kitty behaves

Cats can absorb baneful energy to protect you. This is bad for them but good for you.
I would say do your work in circle, keep all the energy in the cycle and place a shield on the pets and also family members.
