Is it possible to become the sleep paralysis demon? To enter someone else’s dream, would I need to manifest it? Use soul traveling while I know their sleeping? Or enter a dream state myself and lucid dream, but enter there dream through whatever magical means…? Can I harvest different types of energies from people, like fear, pain, etc. Could I gift this energy to entities at my will…? I would love your opinions and instructions on how to do so if possible, if not, please provide an explanation!

Maybe look up how to make a qi ball, and you can do what you want with it. You can program it yourself to hold whatever energy you like and go where you want, no need to go looking for external qi. This is basically a simple thoughtform.
If you employ telepathic influence, particularly trying to push in thoughts of you, while they are asleep I suppose they might dream of you (but far from guaranteed).
But as for going full Freddy Krueger, that might be quite a challenge
