In Evocation do I absolutely NEED a chalice?

This has been answered many times in regards to proper disposal of offerings.

Ideally you pour it out on the ground.

Otherwise it’s fine to pour it down the drain (I usually run water as I pour it out and say some parting thanks or words of acknowledgement).

I’ve noticed that my bathroom sink is preferred to the kitchen one (unless I’ve cleaned and disinfected the kitchen sink)

Depends on the ritual. For example some call for you to drink, it some call for it to be poured on the ground. Do what the ritual specifies if it tells you do x (x being drink it) do x. If it says do y (pour it on ground as an offering) then do y. If it doesn’t specify then do as Arachnos and others here do/suggest.
