What is the difference between a sour jar and a destruction jar?

I’m not sure what the big difference is.They both seem to have the same effect. I’m guessing that the difference is that with a destruction spell the target will suffer more than the person they caused harm too, but I’m not sure. Can someone explain to me the main differences between the two?
