I know that I can make a jar for the target with someone else, but their friends? Would you put the whole group in the jar? What about collegues?

So instead of actual names, try writing “so n so’s friends” on one bit of paper instead of the name, and “so n so’s colleages” on another. They know who they are they’re connected through the collective unconscious to you, and that’s the path the magick will take to reach them.
Put more oomph into it if there’s a lot.

Would you know how I could combine a sour jar with a petition to a demon (like where would I put the sigil, inside the jar or under)? Or it’s an overkill?

I would not combine these, as they come from different traditions, and I don’t think in this case they will clash energetically or anything… just do both separately.
